The apk of my ionic application still has the same app icon even if I changed it and rebuilt?

I created a ionic application with the ionic cli, it uses the @ionic/angular package version 8.5.8.

Ionic is using capacitor in this project.

I made changes to the application (new components, services, etc) getting it to a point that I wanted to make a WIP apk to test on a physical device.

Followed the tutorial, the apk was created and worked as intended, showing the default logo and icon as I did not change them.

Made other changes including putting in a custom app icon.

The apk that I generated contained all the new code, including changes in the css theme but still used the default icon.

I tried other builds, still the same, also tried shutting down my laptop and redoing it maybe it was cached somehow but still it did not help.

I do my developing and debugging in the browser and there the new icon is showing up correctly.

I can also see the new icon in the project when I use Android Studio to create the apk.
